Vegetable Curry

1 green pepper
packet baby marrows
½ cubed butternut
1 onion ? diced
2 tomatoes ? diced
2 potatoes ? cubed
1 brinjal ? sliced, salted, left for ½ hour then cubed
1 punnet mushrooms ? quartered
Garlic
1 Tb curry powder (to taste)
2 bayleaves

1. Heat some oil. Add garlic and fry gently. Add curry powder and fry for a minute. Fry onion and tomato
2. Add rest of ingredients
3. Add 1 litre stock and add in soya mince ( as much as desired)
4. Leave to simmer. Add bisto to thicken gravy
5. Can add diced sweet potato, chopped up beans, baby carrots
6. Add chutney to season
