Ingredients
2 (15 oz) cans creamed corn (In Israel blend 2 cans of corn - don't add frozen corn doesn't cook)
½ cup melted margarine ( I used ½ cup oil)
¼ cup sugar
3 eggs
½ cup flour
1 teaspoon baking powder
¾ cup non-dairy milk substitute ( I used milk)
¼ cup water
1 teaspoon vanilla
Added 1/4 cup craisins to the flour - very nice
Instructions
Preheat oven to 350°F. Grease a 9x13-inch casserole dish.
(I mixed flour baking powder and craisins and then added to wet ingredients which I had mixed with a fork) In a bowl combine all the ingredient EXCEPT the corn. Mix to combine and then add the corn. (You could add some whole corn kernels from a can too)
Pour the batter into the prepared casserole.
Bake for 1 hour and 15 minutes.
This recipe can be doubled.
