(serves 4)
2 cups cooked corn (large tin)
½ tsp salt
2 eggs
½ cup flour (or more if necessary)
½ cup milk/water
1. Beat eggs and add salt, flour and liquid to make smooth batter
2. Add sweetcorn. Drop spoonsful into hot oil
3. Fry till brown
4. Drain well
5. For sweet fritters add 1 Tbs sugar
