Refried Mexican Beans

15 ml oil
½ small onion, chopped
1 clove garlic crushed
1 ml ground cumin (optional)
2 x 400 g can red kidney beans
1-2 chillies seeded & chopped ( I use peri peri)
2ml sugar
salt & pepper

1. Heat oil in saucepan and fry onion, garlic and cumin for a few minutes. Add the beans with 125 ml of the liquid, chilli and sugar
2. Cook over medium heat till liquid is reduced. Mash the beans as they cook to give lumpy texture ? 20 ?30 minutes
3. Season and serve
