From: Amy Rabin

1/3 cup plain, unsweetened soymilk (not vanilla flavoured)
1 lemon
nonstick cooking spray
1/2 cup regular mayonnaise
1/2 tsp dried dill
1/2 tsp dried parsley
1/2 tsp dried chives
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp coarse sea salt or kosher salt
1/4 tsp freshly ground black pepper
2 pounds baby red potatoes each cut in half

Pour the soymilk into a small bowl, add the juice of the lemon and set aside

Preheat oven to 400F. Cover a cookie sheet with foil and spray the foil with nonstick spray and set aside

In a large bowl whisk the mayonnaise, dill, parsley, chives, garlic powder, onion powder, salt and pepper. Whisk in the soymilk. Remove half of the dressing and reserve. Place the potatoes into the bowl with the remaining dressing and toss to coat. Place in a single layer on the prepared pan and roast, uncovered for 40-45 minutes, until fork tender.

When the potatoes are done, remove to a serving bowl and toss with the remaining dressing to coat.

Serve hot
