SERVES 6
Delicious taste like cheese muffins - I made half recipe made 12 patties not muffins
1 tablespoon extra virgin olive oil 3 cups cooked quinoa (1 cup dry=3 cups cooked)
3 large eggs (1/2 recipe - used 1 egg and some liquid egg white)
1 cup shredded mozzarella cheese or combination of cheeses
2 cloves garlic, minced
½ cup sun-dried tomatoes, diced (I rehydrated then diced) ½ cup fresh basil, chopped or 2 tablespoons Italian seasoning ½ teaspoon kosher salt
PREPARATION Preheat oven to 375℉. Coat muffin tins with olive oil. 1. Mix quinoa with eggs, mozzarella, garlic, basil, sun-dried tomatoes, and salt. Spoon mixture evenly into greased muffin tins. (I made patties and cooked 10 mins, turned over and another 10 mins) 2. Bake 25 to 30 minutes until golden and firm. Allow to cool before removing and serving or storing for packing lunches.
