4 Cups cooked or canned chickpeas
2 Cups canned stewed tomatoes
3-4 Tbsp Maple Syrup or Honey
1 Medium onion, chopped
1 green pepper, chopped
1 tsp dijon mustard
1/2 tsp cayenne pepper
freshly ground pepper, to taste
Spray a 2 quart oven proof casserole with non-stick spray. Combine all ingredients and mix well. Cover and bake at 350F for 1 hour.
Freezes and reheats well.
