Biscotti/Mandelbrot

1 c sugar
2/3 c oil (canola or sunflower)
3 eggs
1 tsp vanilla
1 c coarsely chopped pecans (I mix with walnuts if I don't have enough or craisins and chocolate chips)
3 c flour- may need 1/2 c more
2 tsp baking powder
Cinnamon Sugar: 1 cup sugar or less in a jar, add 1-2 tsp cinn, shake

Cream sugar and eggs together well. Add oil gradually. Add vanilla, nuts, flour, baking powder.

Divide dough in fourths and shape in long rolls with oiled hands if needed. I place on baking paper and bake 350 (180 C) for 1/2 hour.

Slice carefully and lay them on their sides, I then sprinkle with cinnamon sugar, bake for another 1/2-3/4 hour, you can turn them onto both sides if you like

Watch not to burn them

*I don't use nuts, but added 1C chocolate chips instead! Enjoy J
