Yael's Roasted vegetable soup

3 large or 4 small sweet potatoes
2 green zucchini
1 yellow squash
2 red bell peppers
1 cauliflower

Peel potatoes and cut them into 1/4" slices. Slice zucchini, cut peppers. Put all on a baking sheet and cover with olive oil. The vegetables should be well coated. Sprinkle with salt. Bake at 450 degrees for 30 minutes.

Cut up cauliflower and place in bowl and cover with olive oil. Then sprinkle salt, garlic powder, paprika, zaatar. Place on a baking sheet and also bake at 450 degrees for 30 minutes.

After everything roasted, place in soup pot. Add 1-2 onions, 32oz box of paerve soup. Add more water to completely cover vegetables. Add 1-2 tablespoons consommé powder. Cover and bring to a boil. Then, lower to simmer for 1-2 hours. Then use immersion blender.

Serves 8-10 people.
