Vinegar Brown Pudding Recipe

Mom (double recipe makes small amount)

1 cup flour
2 tsp ginger
pinch salt
1/4 tsp nutmeg
1/2 tsp cinnamon
2 Tbsp apricot jam
2 Tbsp raisins

Mix above together
Pour over 125g melted butter/ 125ml oil
1 tsp vanilla
1 tsp bicarb dissolved in 1 Tbsp hot water (very important!!!!)
Spoon into baking dish and pour over 1 cup hot water mixed with 1 cup brown sugar.
DO NOT STIR!!
Bake 180C for 40mins- cook less so its still juicy
Do not let dry out

Serve with custard or vanilla ice cream
