Tomato Bulgur Pilaf

Instructions

Ingredients 1 tbsp (15 mL) olive oil 1 onion, chopped 3 garlic cloves, minced 1/4 tsp (1 mL) salt 1/4 tsp (1 mL) pepper 1-1/2 cups (375 mL) bulgur 1/4 cup (60 mL) tomato paste 2 cups (500 mL) chicken stock/water flavored with salt and garlic powder Directions In saucepan, heat olive oil over medium heat. Cook onion, garlic, salt and pepper until softened, about 5 minutes. Add bulgur and tomato paste; cook for 2 minutes. Stir in chicken stock and bring to boil; remove from heat, cover and let stand until tender, about 15 minutes.
