Sweet Potato and Pear Soup

SWEET POTATO & PEAR SOUP 2 tsp butter 1 small onion 2 large orange sweet potato 2 large pears (or one large can pears in juice) 3 cups chicken stock 1 cup milk fresh min & plain yoghurt to garnish - Cook finely chopped onion in the butter till soft and clear. - Add peeled & chopped sweet potato & pears and cook for 2 minutes - Add stock and bring to the boil - Cook till vegetables are soft - about 20 minutes - Blend till smooth and adjust consistency with milk or more stock. - Add seasoning to taste - Serve garnished with yoghurt swirl and fresh mint.
