RENANAS APPLE HONEY COOKIES FOR ROSH HASHANA (Makes approx 20 decent size. Don't double recipe rather makes recipe twice otherwise sugar, bicarb and baking powder don't mix properly) Dont store wet apple and dry apple biscuits in one tin as they go soggy Ingredients 1 & 1/2 cups flour 1 tablespoon baking powder 1 teaspoon baking soda 1 teaspoon cinnamon (Add more cinnamon to taste and some ginger too) 1 egg 1/2 cup light brown sugar 1/4 cup honey 1 cup dried apples cut to small pieces/ 1 cup fresh apples cut into small pieces 85 grams (1/3 cup) coconut oil (Normal oil) Preparation: 1. Set the oven to 180°C/ 350°F with the fan. 2. In a bowl, mix all the ingredients well. (Rather beat together the dough mixture till well mixed and then stir in dry/wet apples.) 3. On a baking pan, place 1 tablespoon of batter in large intervals. 4. Bake for 10 minutes. 5. Cool at room temperature. Dry apple biscuits are crispier than the fresh apple ones
