Pesach Tuna Pie

Crust:
1 cup matzah meal
1/3 cup oil
1/4 cup orange juice

Mix and form crust in a pie dish. Bake at 350 degrees for 10 minutes.Cool.

Pie
1 cup diced onion
1/2 cup mayonnaise
1/2 Tbsp potato starch
1 Egg white
1 can tuna drained
1/2lb mushrooms, sliced
2 Tbsp cake meal
2 eggs
1/2 cup milk
4-8oz cheese

Saute together onions and mushrooms. Combine rest of ingredients (except egg white and half of the cheese). Add onion mixture, and season to taste with salt and pepper. Brush pie crust with egg white. Pour into the pie crust and top with remaining cheese. Bake at 350 degrees for 40 minutes, or until the top is golden and bubbly.
