Milk Tart - Granny Sandy

4 1/2 cups milk – preferably full cream ¾ cup sugar
2 ½ Tbs all purpose flour 2 ½ Tbs cornflour
Pinch salt 3 eggs
1 ½ tsp vanilla essence 1 Tbs butter
1 packet Nice biscuits (Tennis biscuits) Cinnamon & sugar

Boil together ¾ cup milk together with sugar in saucepan
Sift together flour, cornflour and salt
Beat eggs and add to dry ingredients with rest of milk in a separate bowl
Pour boiling milk into the cold milk mixture and stir well
Return to saucepan and to stove and boil (on low heat) until bubbles form – beating well all the time.
Add butter and vanilla and keep stirring until butter melts
Place biscuits in layer at bottom of glass dish
Pour over ½ mixture, sprinkle with cinnamon and sugar
Place another layer of biscuits on top, spread rest of mixture and sprinkle with cinnamon and sugar.
Leave in fridge to set
