CHUTNEY ? Micro (Makes 1 kg ? 4 medium jars) 250 g dried apricots, soaked in water overnight 500g/3-4 large cooking apples, peeled,cored and chopped 250g/415 ml seedless raisins/sultanas 1 onion peeled and chopped 5ml salt grated rind and juice of 1 lemon/orange 2 bayleaves 1 stick cinnamon Black pepper 700ml white/brown vinegar 500g/625ml brown sugar 1. Drain apricots and place in large glass bowl 2. Add remaining ingredients 3. Cook uncovered on high approx 20-25 minutes till fruit is thick and pulpy. Stir 4-5 time during cooking 4. Remove bayleaves and cinnamon stick. Can blend in food processor to make smoother 5. Spoon while hot into hot,sterilized jars.Seal and label 6. Store 3-4 months to mature. 7. Better to cook on stove than micro for ½ hour till vinegar evaporates
