Meringues

Makes 1 1/2 trays so can double/treble

1 white of extra large egg
30ml boiling water (2 Tbsp)
2ml baking powder (3/4 tsp)
250ml castor sugar (1 Cup regular sugar)
15ml white vinegar (1 Tbsp)

Heat oven to 100C/200F (only use middle shelf)
Cover 2 baking trays with foil, shiny side up
Put white of egg, castor sugar, vinegar and boiling water (do last otherwise it cooks the eggs) in mixing bowl. Beat quickly until egg white is stiff and stands in peaks.
NB: FOLD IN BAKING POWDER
Place spoonfuls or pipe onto tray
Bake 1 1/2 hours
Switch off oven and leave until oven is cold (overnight)
Keep in airtight container
