Marinated Tomato & Chickpea Salad

Mix in bowl:
3 Tbsp brown sugar
1.5 tsp salt
6 Tbsp vinegar

9 Tbsp (135 ml) oil - heat until hot

Saute 1 min:
3 Tbsp chopped ginger
3 Tbsp fresh garlic

Stir in:
1.5 tsp mustard seed
1.5 tsp pepper
1.5 tsp cumin
1.5 tsp tumeric
pinch cayenne

Remove from heat, add to vinegar

Add 6 cups cherry tomatos halved

Optional:
Add 1-2 jalapeno peppers, seeded and finely diced
3-4 scallions thinly sliced
2 Tbsp cilantro chopped
