Eggplant, Pesto and Parmesan appetizer

Slice eggplant in circles
Salt slices and allow to sit for 1 hour to remove bitter juice.
Egg slices and then coat in breadcrumbs
Fry
Place a dollop of pesto on each slice followed by a bit of parmesan cheese.
Broil until cheese goes golden.
Serve with sweet chilli sauce.
