Double choc chip muffins

2 eggs 125ml cup oil (1/2 cup)
250ml milk (1 cup) 1 tsp Vanilla Essence
240g flour (1 3/4 cup) 85g White Sugar (1/2 cup)
35g cup cocoa (1/4 cup) 1 Tbsp baking powder
1/2 tsp salt
85g (1/2 cup) semi sweet choc chips (I used white choc chips)

Preheat oven to 200°C and prepare muffin pan by greasing or line with paper liners. Do not grease muffin cups. A non stick pan requires no greasing, however just grease the bottoms.
In a bowl mix well the eggs, oil, milk and vanilla( with fork) .
In a large bowl mix well the flour, sugar, cocoa, baking powder, salt and choc chips. Combine wet and dry mixtures (use fork) and fold gently together until just mixed.
(Runny mixture)
Spoon into prepared pan.
Bake at 200°C for 20 mins. (My oven 15 mins)
Remove from pan and cool on rack. Makes: 12 large muffins
