1/2 cup old fashioned oats
1/2 cup cottage cheese
2 large eggs
1/8 tsp kosher salt
Maple syrup,jam or berries for serving
Place the oats, cottage cheese,eggs and salt in a blender and process on high speed until well combined about 30 seocnds
Fry batter in non stick frying pan over medium heat.Cook until pancakes are set arouund the edges and deep golden brown on the bottom (the batter does not bubble like traditional pancakes)
Gently flip with a spatula and cook the other side.
Recipe does not make much so double it
