5oz mixed greens 2 Persian cucumbers finely diced 2 pickles finely diced 5-6 green beans sliced into small rounds 1 avocado diced 1/4 cup crispy onions Dressing: 1/2 cups mayonnaise 1/3 cup water Juice of 1/2 lemon (about 2 Tbsp) 3 garlic cloves, crushed 1 Tbsp dried basil 1tsp salt 1/4 tsp black pepper 1 Tbsp yellow mustard 1) Whisk together all dressing ingredients 2) In a bowl, combine greens, cucumbers, pickles, green beans and avocados. Toss with dressing (you will not need all of it). Top with crispy onions and serve.
