Classic Apple Cake

1 cup oil
2 cups sugar
3 eggs
3 cups flour
1 tsp salt
1 tsp baking soda
1 tsp vanilla extract
3 cups peeled, cored and cubed apples
1 cup raisins
1 tsp cinnamon

Use: 9 inch tube or bundt pan

Preheat oven to 350F
Grease and flour a 9 inch tube or bundt pan.
In a large mixer bowl, beat oil and sugar.
Add eggs then flour, salt, baking soda and vanilla.
Set aside
In a separate bowl, toss cubed apples, raisins and cinnamon until apples are covered.
Stir apple mixture into batter.
Batter will be very stiff.
Spoon into the greased tube or bundt pan and bake for 1 hour.
Cool completely before cutting.
