(Can make 3 days in advance - place on blech while eating dinner to warm up)
300 g good quality parev chocolate/ choc chips - broken into pieces
1 cup oil
1/2 cup boiling water 3 Tbs strong coffee granules
4 whole eggs 4 egg yolks (keep whites for pavlova/meringues)
2 cups icing sugar ¾ cup flour or 1 cup gluten free flour/potato starch
Preheat oven to 200 deg C/400 F
In medium sized (non stick pot) melt the chocolate with the oil (stir with a spatula or whisk), stir till smooth - let cool for 5 minutes
Dissolve the coffee granules in the boiling water and add to above. Stir quickly
Add the eggs and whisk
Add the icing sugar and whisk till no lumps
Add the flour and whisk till no lumps (Mixture thick)
Place muffin cups in muffin pan - spray with cooking spray - pour in batter ¾ full
Bake 10 - 12 mins small muffin cups, larger ones 12 -15 minutes - top will be hard and inside will be gooey.
Can turn out and serve with ice cream and berries or leave in cookie cup
