Carrot Pancakes

1¾ cup milk
2 eggs
¼ cup butter, softened
4 medium carrots, chopped
2 cups flour (I use half white and half whole-wheat)
2 Tablespoons baking powder
1 teaspoon salt
4 Tablespoons sugar
½ teaspoon cinnamon
¼ teaspoon nutmeg
(optional: add 1 Tbsp. ground Flax seed or wheat germ when you add in the flour)

INSTRUCTIONS
Pour milk, eggs and butter into blender. Mix briefly. Add carrots and blend until there are no chunks. Add flour, baking powder, salt and sugar; mix until all is blended smoothly. Add nutmeg and cinnamon and blend for 1 minute. If mixture seems to thin add a little more flour.
Heat a pan to medium and spray with non-stick cooking spray and pour on batter (about ⅓ cup each.) Cook for a few minutes each side until it’s golden brown and enjoy!
NOTES
If you want to make Mickey shapes just make the circle pancake as usual and using a spoon drop batter for ears.
