Carrot Muffins



Carrot muffins:
-1 lb carrots boiled and pureed
- 3/4 cups oil
-2 teaspoons vanilla extract
-3 whole eggs and 1 egg white
-1 and 1/2 cups sugar

Mix all of the above with electric mixer.
Add
-1 cup cake meal
-1/2 cup potato starch
- 1 teaspoon baking powder
-1 teaspoon baking soda
-1 teaspoon cinnamon

Mix till combined with electric mixer. Pour into muffin cups (I make some mini and some regular size )
350 for 20-25 min for regular size. 15 min for mini.
